It is also an great reference for recipes from around the world for the serious home chef. The writing is clear and easy to understand. The recipes are complete with excellent instructions and comments on methods to use. The comments on wine choices with the complete menus is appreciated and helpful as the wines mentioned in the book are not readily available today.
For those that remember, a copy of the original Narsai's Restaurant wine list is a nice bonus. Working your way through this book will give any home chef a much broader range of recipes and techniques.
