Galatoires, as Burton and Holditch portray it, is a microcosm of New Orleans traditions reflected in the history of the Galatoire family, the loyal generations of staff, food tastes as they have evolved, and the eccentric, and sometimes famous, patrons throughout the years who have made the restaurant so successful. The layout with photographs and numerous anecdotes convey the vitality of this venerable institution. We even tried some of the recipes and created a little bit of Galatoire heaven in our own kitchen. The many facets of this book will appeal to a broad spectrum of readers.
